- Peel the skin of bittergaurd..
- Cut the both end of bittrgaurd and scoop of the inner flesh and seeds..
- Cut the 5 mm sized of rings like shape of bittergaurd..
- Marinate with ample amount kf salt and leave for about 4-5 hrs or overnight..
- Give the good wash and boil in water,vinegar and sugar.
- Remove the water and boil again with water,vinegar and sugar.
- For the sauce.
- In a saucepan boil jagerry,tamrind,degi mirch,cumin powder and salt..
- Boil untill jageery and tamrind completely dissolved..
- Heat a saucepan,add curry leaves and tomato puree..
- Then add tamrind liquid and cook for about 15-20 minutes..
- Heat oil for frying the bittergaurd.
- Dust some cornflour on butergaurd and fry untill crisp..
- Another saucepan add 2-3 spoons of sauce and stirr fry..
- Sprinkle some amranth for garnish.
